Shanpapri, also spelled as "Son Papdi" or "Soan Papdi," is a popular sweet originating from the Indian subcontinent. It is made from gram flour (besan), flour, ghee (clarified butter), sugar, and cardamom powder.
To prepare Shanpapri, a mixture of gram flour and flour is roasted in ghee until golden brown. Then, a sugar syrup is prepared separately and flavored with cardamom powder. The roasted flour mixture is then mixed with the sugar syrup until it forms a dough-like consistency. This mixture is then spread thinly on a flat surface and allowed to cool. Once cooled, it is cut into small square or diamond-shaped pieces.
Shanpapri has a flaky and melt-in-your-mouth texture with a sweet, aromatic flavor from the sugar and cardamom. It is often enjoyed as a dessert or snack, particularly during festivals and special occasions like Diwali or weddings.
